#1067 Remove dead S3/MinIO and SMTP-era host pins: compose extra_hosts s3.rodmena.co.uk and mail.rodmena.co.uk, docker/.env S3_*, stale host /etc/highway/config.ini

Description

Edit
EARS SPEC: - The Highway containers shall not pin s3.rodmena.co.uk or mail.rodmena.co.uk in extra_hosts. - docker/.env shall not set S3_ENDPOINT, S3_BUCKET or S3_REGION. No code reads them; datashard reads DATASHARD_S3_*, set from config only when storage_type=s3. - vm-1 shall not carry a host /etc/highway/config.ini that no container mounts. FOUND 2026-10-25: infra-manager (01M5RE7F6MZATZE4H0XZYZJCD7) read the host file /etc/highway/config.ini (dated 2025-12-12, systemd era; [datashard] and [uploads] storage_type=s3 at s3.rodmena.co.uk) as Highway's config. The containers mount docker/config.ini, where both have been storage_type=local since 60a367a (2025-12-27). The X1 MinIO behind s3.rodmena.co.uk was switched off 2026-10-25 and held zero buckets. Known positive for local storage: the 2026-10-25 golden runs wrote 609 datashard files under highway-test-logs/data/demo/<run id>. mail.rodmena.co.uk is only the sender and reply domain now; mail-api is https://mailserver.rodmena.co.uk (#927).
